The BEST Lactation Cookies

Ingredients:

  • 1 2/3 cup of oat flour

  • 3/4 cup dried old fashioned oats, dry

  • 1 cup of coconut sugar

  • 1/4 cup brewers yeast

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 1/4 cup ground flaxseeds

  • 1/2 cup water, room temperature

  • 1/3 cup melted coconut oil

  • 1 tsp vanilla extract

  • 2/3 cup dairy free dark chocolate chips

Directions:

  1. Mix 1/2 cup of water and flax meal until well combined. Sit aside for 5 minutes to thicken

  2. In a large mixing bowl combine oat flour, oats, brewers yeast, coconut sugar, salt and baking soda. Whisk to combine.

  3. Add in flax meal & water mixture, coconut oil and vanilla and mix until a dough forms. Fold in chocolate chips.

  4. Line a baking sheet with parchment paper. Scoop out cookie dough with a medium cookie scoop. This recipe should yield 12 - 14 medium to large cookies. Set the cookies 1 - 2 inches apart and bake at 350˚F for 10 minutes.

  5. Allow cookies to completely cool before storing. You can store in your freezer for up to a month.
