Easy One Pan Dinner

Ingredients:

  • 1lb of raw sausage links of choice (Publix Chicken & Kale sausage is my favorite)

  • 1lb of golden baby potaotes

  • 1 bag of broccoli

  • olive oil & salt and pepper to taste

Directions:

  1. Preheat your oven to 425˚F and line a large baking sheet with foil.

  2. Place raw sausage links in the center of your baking sheet in a single file line,

  3. Slice potatoes in half. Add potatoes and broccoli to your baking sheet (potatoes on one side, broccoli on the other).

  4. Drizzle olive oil over vegetables only and toss to coat. Add desired seasoning (I use S & P) and toss to coat vegetables. Line potatoes face down on pan so they can crisp up while cooking

  5. Bake at 425˚F for 30 minutes. Remove from oven and serve hot.

NOTES:

*This dish is very versatile. You can add more or less of an ingredient as well as swap out ingredients for different ones. For example this works with all potatoes (sweet, red, russet) as well as all cruciferous and root vegetables (Brussels sprouts, cauliflower, carrots, etc).
