Maple Sea Salt Almond Butter Cookies

Ingredients:

  • 1/2 cup natural creamy almond butter

  • 1/2 cup refined coconut oil, softened NOT MELTED

  • 3/4 cup coconut sugar

  • 1 large egg room temperature

  • 1/4 cup 100% pure maple syrup

  • 2 cups of Bob's Red Mill Almond Flour

  • 1 tsp baking soda 

  • 1/2 tsp fine sea salt

  • Optional: course or flaky sea salt for topping

Directions:

  1. In a large bowl, cream together coconut oil and almond butter until smooth. Add in egg and pure maple syrup and mix until smooth and creamy.

  2. Next add in coconut sugar and mix into better.

  3. Add in baking soda, fine sea salt, and almond flour 1/2 cup at a time until cookie dough is formed. Allow dough to chill in the fridge for 15-20 minutes.

  4. Remove from fridge, scoop our cookie dough with a large cookie scoop and place on a parchment paper lined baking sheet.

  5. Bake at 350˚ F for 10 minutes. Remove from oven and allow the cookies to cool for 15 minutes before enjoying. Sprinkle with flaky sea salt if desired.
