The BEST Chocolate Fudge

Servings: 16 Prep Time: 5 Min Cook Time: 45 Min Total Time: 1 Hr 20 Min

Ingredients:

  • 2 cups of mashed sweet potatoes (about 2 medium potatoes)

  • 1/2 cup of natural creamy almond butter (find my easy recipe here)

  • 2/3 cup of canned full fat coconut milk 

  • 1 1/2 Tbs of unrefined coconut oil measured out then melted

  • 2 scoop of chocolate protein powder of choice

  • 1/2 cup of unsweetened cocoa powder

Directions:

  1. Peel sweet potatoes and cut into quarters. Bake in oven at 500˚F for roughly 45 minutes or until the sweet potatoes are soft enough to mash. Place cooked sweet potato in a food processor and blend until smooth.

  2. Add in creamy almond butter, coconut milk and melted coconut oil and blend until smooth. Add in protein powder and cocoa powder and blend until smooth.

  3. Pour fudge batter into a parchment paper lined 8x8 baking dish. Spread evenly and place in freezer for 20 minutes or until the fudge as completely set.

  4. Slice into 16 equal pieces and place in a sealable container. Store in the freezer until ready to enjoy!
