Apple Pie Bars
Ingredients For the Crust/Streusel topping:
2 cups of Bob's Red Mill almond flour
2 Tbs Bob's Red Mill coconut flour
3 Tbs Perfect Supplement coconut oil (buy here use code MEASURE10 to save money)
1 tsp vanilla
Ingredients for For the Filling:
1 tsp cinnamon
2 large Granny Smith apples peeled, cored and chopped
1/2 tsp nutmeg
1/4 tsp sea salt
1/4 cup Tapioca Flour
1/3 cup maple syrup
1/3 cup water
Directions:
Preheat oven to 350 degrees F. Prep an 8x8 pan by lining it with parchment paper. Mix all crust ingredients in a large bowl. Take 2/3 of the dough and press into the lined pan and bake for 15 minutes. While crust is baking make filling. Combine cinnamon, nutmeg, salt and tapioca flour in a small bowl. Coat the apples with the mixture and place in a medium saucepan. Add water and maple syrup and cook over medium heat until the mixture thickens and a sauce begins to form (roughly 8 minutes). Remove from heat and pour over baked crust. Crumble the remaining dough on top and bake for an additional 20 minutes. Allow mixture to cool before slicing into 9 equal pieces.
