Strawberry Chia Honey Muffins

Ingredients:

1/2 cup of Perfect Supplements coconut oil softened

1/2 cup of Madhava Light Amber Honey

2 tsp vanilla extract

1 cup of So Delicious unsweetened vanilla coconut milk 

3 large eggs

2 cups of Bob's Red Mill almond flour

2 tsp baking powder

2 Tbs of chia seeds

1 cup of fresh strawberries chopped

Directions:

Preheat oven to 350 degrees F. Take a 12 muffin tin and place a cupcake/muffin liner in each muffin holder. Spray the liners with cooking spray. In a large bowl add coconut oil, honey, vanilla, milk and eggs and whisk together until well combined. In a separate bowl mix all dry ingredients together (reserving strawberries for the end). Slowly add dry ingredients to wet and mix until a batter is formed. Fold in strawberries. With a large cookie scoop, scoop out batter and fill each of the muffin liners. You should have enough better for 12 muffins. Bake for 20-25 minutes or until muffins  are golden brown on top and come out clean with a toothpick.
