Chocolate Chip Skillet Cookie
Ingredients:
2 large eggs
2/3 cup of smooth & creamy nut butter of choice (almond & cashew are my favorite
2 Tbs of Perfect Supplements coconut oil softened
1/4 cup of Madhava coconut sugar
1/4 cup of pure maple syrup
2 tsp of vanilla extract
1/3 cup of coconut flour
3/4 tsp baking soda
1 Hu Kitchen Chocolate bar of choice chopped (my favorite are the Salty Dark Chocolate or the Hazelnut Butter Dark Chocolate)
Optional: 3 Tbs of bourbon of choice
Directions:
Preheat your oven to 350 degrees F and lightly grease a medium (8-10”) skillet with coconut oil. In a large bowl, combine eggs, coconut sugar and maple syrup with an electric mixer. Once smooth add in almond butter, coconut oil and vanilla and combine until smooth (add in bourbon here if desired). In a separate bowl combine coconut flour and baking powder. Add dry ingredients to the wet ingredients until a sticky dough is formed. Fold in the chocolate chunks. Transfer dough into the greased skillet and press evenly. Bake for 10-15 minutes. Make sure to not over-bake the cookie. Allow to cool for 10 minutes and serve with your favorite dairy free ice cream of choice.
