The ULTIMATE Healthy Brownie Recipe

Servings: 9-12 Prep Time: 10 Min Cook Time: 25-35 Min Total Time: 40 Min

Ingredients:

  • 1 cup coconut sugar

  • 1/3 cup almond flour

  • 2 Tbs unsweetened coco powder

  • 1 Tbs coconut flour

  • 1 Tbs tapioca flour

  • 1/2 cup + 1 Tbs coconut oil, melted

  • 2 Tbs cold coffee

  • 1 cup of dairy free chocolate chips, melted

  • 1/3 cup diary free chocolate chips, folded into the batter

  • 2 -3 large eggs, cold*

Directions:

  1. Preheat the oven to 325˚F

  2. Add the melted coconut oil and the one cup of chocolate chips into a microwave safe bowl and microwave on high for one minute. Mix together until one well combined and set aside to cool.

  3. In the meantime lightly cream together coconut sugar and two eggs. Be sure to not over mix. This will cause your brownies to be cake like.

  4. Once your coconut sugar and eggs are mixed together add in the coffee, flours and salt and mix together.

  5. Pour in the melted chocolate / coconut oil into your batter and whisk together until a batter forms. It will turn out exactly like regular brownie batter.

  6. Fold in the remaining 1/3 cup of chocolate chips.

  7. Pour batter into either an 8x8 or 9x13 baking dish. Be sure to grease and line the baking dish. Bake at 325˚F for 25-35 minutes (8x8) or 20-30 minutes (9x13).

  8. Allow brownies to cool for 10 minutes before slicing.

Notes:

*For a more fudgy brownie use two eggs, for more cake like brownies use 3 eggs and slightly whip the coconut sugar and eggs together until light and fluffy.
