Super Fudgy Protein Brownies
SERVINGS: 12 Brownies PREP TIME: 5 min COOK TIME: 10-15 min TOTAL TIME: 20 min
Ingredients:
1 cup of oats, blended into oat flour
1 -2 scoops of protein powder of choice*
1/4 cup of unsweetened cocoa powder
1 tsp baking powder
2 eggs
1/2 cup pumpkin purée
2 Tbs pure maple syrup
1 tsp vanilla extract
1/3 - 1/2 cup of unsweetened diary free milk**
1/4 cup Enjoy Life chocolate chips
Directions:
In a medium bowl combine oat flour, protein powder, cocoa powder and baking powder until well combined.
Add remaining wet ingredients, reserving the chocolate chips for the end and mix until a brownie batter forms.
Fold in diary free chocolate chips. Pour batter into a greased 8x8 baking dish.
Bake at 350˚F for 10-15 minutes or until center is fully cooked.
Slice into 12 squares and enjoy!

Notes:
* Depending on your protein powder use 1 - 2 scoops. Typically vegan protein has less than 30g per serving so I would suggest using two scoops. You may need to add more milk.
**Depending on the protein powder that you use you might need to add extra liquid to create a thinner batter. If your batter is too thick your brownies may become dry when baking.
