The Healthiest Cinnamon Rolls on Earth
Ingredients for the Dough:
2 cups of King Arthur 100% white whole wheat flour*
2 Tbs of Madhava coconut sugar
1 Tbs baking powder
1 tsp sea salt
4 Tbs unsweetened natural apple sauce
1 cup of unsweetened dairy free milk of choice
Ingredients for the Filling:
1 cup of Madhava coconut sugar
1 Tbs of cinnamon
3 Tbs of coconut oil
Ingredients for the Frosting:
5 oz of Kite Hill Cream Cheese
2-4 Tbs of 100% pure maple syrup*
1 tsp vanilla extract
Directions for the dough:
In a large mixing bowl or stand mixer add flour, baking powder, coconut sugar and sea salt all together. Add in apple sauce and mix the flour together. This should be a crumbly mixture. Add in the milk a little at a time until a dough forms. You may not need all the milk so make sure to add it slowly. Once the dough is formed flour your surface well and roll it out into a rectangle. The dough should be about 1/3 inch thick all the way around.
Directions for the Filling:
In a small bowl mix all the filling ingredients together minus the coconut oil. Take a 9 inch round cake pan and grease the bottom and sides well with some of coconut oil. Take 1/3 of the filling mix and evenly sprinkle it on the bottom of the pan. Take the remaining coconut oil and spread evenly over rolled out dough. Sprinkle remaining filling mixture evenly over the dough. Roll the dough into a log and cut into 12 even pieces with a sharp knife. Place each roll into the pan. It's okay if they are a little snug. Bake at 350 degrees F for 20 minutes.
Directions for the Frosting:
Take all frosting ingredients and mix together with a hand mixer. Spread across the top of the rolls while they are warm.

*You can swap 2 cups of white whole wheat flour for 1 1/2 cups of oat flour and 1/2 cup of tapioca flour OR you can swap out for 2 cups of all purpose gluten free flour.
