Chocolate Chip Cookie Dough Cake

Ingredients for the Cookie Dough Center:

1/2 cup of Organic Valley ghee softened

1 cup of Madhava coconut sugar

2 tsp of vanilla extract

2/3 cup of Enjoy Life mini chocolate chips

1 cup of Bob's Red Mill almond flour

Ingredients for the Cake:

2 2/3 cup of Bob's Red Mill almond flour

1 tsp baking soda

2 tsp baking powder

3/4 tsp sea salt

1 cup of Madhava coconut sugar

3 eggs room temperature

1/3 cup of coconut oil (melted then measured)

2 tsp of vanilla extract

1 1/2 cup of So Delicious unsweetened coconut milk slightly warmed (this is key because anything cold will cause the ghee and coconut oil to harden) 

Vanilla Bean Frosting:

1 container of Miss Jones Organic Vanilla Frosting

1 tsp maple extract (optional -  this gives the frosting a slight maple flavor which pairs nicely with the creamy cookie dough center)

Directions for the Cookie Dough: 

Add ghee and coconut sugar into a mixing bowl and cream together with a hand mixer. Add in vanilla extract and coconut sugar and mix together. Fold in chocolate chips. Take a 9 inch cake pan and line with parchment paper. Press cookie dough down into the lined pan and freeze until solid and ready to use.

Directions for the Cake:

In a stand mixer or a large bowl add all dry ingredients and whisk together. Add in softened ghee, eggs, and coconut oil. Add in vanilla extract and coconut milk. Pour batter into two greased and parchment paper lined cake pans. Bake at 350 degrees F for 20-30 minutes or until the center of the cake comes out clean with a toothpick. Allow cakes to cool completely before removing from the pans and assembling the cake. I suggest waiting a full hour to be safe. 

Directions for the Frosting:

Remove all of the frosting from the can. Add in maple extract and whip together with a mixer.

Directions for the Assembly:

Take the first cake and place it on a cake stand. Add on the cookie dough layer to the top of the first cake. Take the second cake and place it on top of the cookie dough layer. You should now have an assembled cake like so: cake, cookie dough, cake. Frost the cake and refrigerate until the ready to serve.
