Double Chocolate Fudge Banana Bread
Ingredients:
3 medium ripe bananas mashed
1 egg
3 Tbs coconut flour
1/2 cup melted coconut oil
1/2 cup unsweetened cocoa powder
1/2 cup maple syrup
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
pinch of sea salt
1/2 cup enjoy life dark chocolate chips
1/4 cup enjoy life mini chocolate chips
Directions:
preheat oven to 350 degrees F. Mix banana, egg, melted coconut oil, maple syrup, vanilla extract in a large mixing bowl with a hand mixer or kitchen aid. Mix coconut flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl. Slowly add dry ingredients to wet ingredients. Fold in dark chocolate chips. Pour batter into a parchment paper lined loaf pan. sprinkle mini chips on top. Bake for 50 minutes or until center comes clean with a toothpick. Let cool. slice and enjoy warm with a scoop of your favorite nice cream or smothered with your favorite nut butter.
