Spicy Shrimp Zoodle
Ingredients (serves 3-4):⠀
1 lb of peeled and deveined shrimp raw⠀
3 small zucchinis spiraled or 1 lb of pre-spiraled zucchini⠀
1 15oz can of organic diced tomatoes ⠀
1 small onion chopped ⠀
3-4 sweet mini peppers chopped ⠀
2 cloves of garlic minced ⠀
2 tsp of Italian seasoning ⠀
1 tsp onion powder⠀
1/2-1 tsp of red chili flakes⠀
1/4 cup fresh basil chopped ⠀
Salt and pepper to taste ⠀
Directions:⠀
Take zucchini and make noodles with a veggie spiraler. Place zoodles in a large bowl with a clean cloth. Season shrimp with salt and pepper. Add oil of choice (I use olive) to a skillet over medium heat and cook shrimp until pink on each side. Set aside. In a large skillet add olive oil and garlic. Once the garlic becomes fragrant add onions and peppers. Cook until onions are clear. Add canned diced tomatoes, Italian seasoning, onion powder, and red pepper flakes. Let mixture begin to simmer. Add shrimp and fresh basil. Mix until well combined. Let simmer for 5 minutes. Take zoodles and carefully squeeze any water out of them. Add to a skillet with oil and cook until tender. Add salt and pepper to taste. Remove everything from heat. Ladle sauce and shrimp over a portion of zoodles and enjoy. ⠀
