Pork Tenderloin CP Dinner
Ingredients:⠀
1.5-2lbs of lean pork tenderloin⠀
1 granny smith apple (any type of apple works but I love the sour snap of a Granny Smith)⠀
1-2 Tbs whole grain mustard⠀
1-2 cloves of garlic minced ⠀
1/2-2/3 cup of 100% natural apple juice ⠀
Salt, pepper, rosemary to taste⠀
1lb bag of baby carrots ⠀
2 steam in bags riced cauliflower ⠀
1/4 cup 100% natural chicken bone broth ⠀
⠀
Directions for the Pork:⠀
Combine garlic, whole grain mustard, and apple juice. Season pork with salt, pepper, and rosemary. Marinate pork in the juice combination over night or for at least 4 hours. Once marinated remove pork and slice just enough so an apple wedge can fit. Slice up Granny Smith apple into wedges. Place one wedge in each slice in the pork tenderloin. Place pork into crock pot and pour marinade on top. Cook on low for 6 hours. ⠀

For the Carrots:⠀⠀
Pour carrots into crockpot two hours before pork is finished cooking. Allow to cool until pork is finished. ⠀

For the Faux-tatoes:⠀⠀
Steam cauliflower in microwave for roughly 8 minutes. Remove from microwave and place in a high power food processor for blender. Blend until smooth. Add in bone broth and any additional seasonings and blend. ⠀⠀
Serve all ingredients hot.
