Gluten Free Bagels

Ingredients for the bagels:⠀

2 cups of GF all purpose @kingarthurflour ⠀

1/2 Tbs active dry yeast ⠀

1/2 Tbs coconut sugar ⠀

1 tsp kosher salt ⠀

3/4 cup warm water ⠀

For the water Bath:⠀⠀

1 quart of water ⠀

1 Tbs of coconut sugar ⠀

1/2 Tbs pure maple syrup ⠀

Directions:⠀

Pour water into a large mixing bowl. Add in coconut sugar and stir until dissolved. Add in yeast and let sit for 3 minutes. After 3 minutes sift flour and salt into the bowl and stir until a dough begins to form. Kneed dough for roughly 10 minutes then transfer to a large greased bowl, cover with a kitchen towel, and let rise for 1.5 hours. Transfer dough to a floured surface and divide into 4 equal parts. Shape into 4 balls and cover with a kitchen towel and let rest for 30 minutes. Make water bath by boiling 1 quart of water and adding in the coconut sugar and maple syrup. After resting poke a hole through the middle of the dough balls. carefully stretch out a larger hole and form your bagel. Boil bagels for 1 minute and then flip with a slotted spoon and boil for another minute. Remove from water bath and place on a parchment lined baking sheet. Bake at 425 degrees F for 20 minutes or until browned on top. You can add seeds or any toppings you want by removing from oven after 10 minutes, brushing with water, adding your toppings and baking for the remaining 10 minutes. Top with @kitehillfoods cream cheese& homemade jam.
