Lean Breakfast Hash

Ingredients For The Hash:

  • 1/2 large onion chopped

  • 1 cup mini sweet peppers chopped

  • 2 medium - large sweet potatoes

Ingredients For Breakfast Sausage Seasoning:

  • 1 lb of lean ground chicken

  • 2 tsp poultry seasoning

  • 1/2 tsp fine sea salt

  • 1/4 tsp black pepper

  • 1/4 tsp ground nutmeg

  • 1/8 tsp allspice

  • 1/4 tsp fennel seeds

  • 1/8 tsp cayenne pepper (optional)

  • 1/8 tsp red pepper flakes (optional)

Directions For The Hash:

  1. Rough chop your peppers and onions.

  2. Add to a large skillet with 2 Tbs of olive oil over medium high heat and cook until onions and peppers are slightly softened.

  3. Chop up your sweet potatoes into cubes and add to a large ziplock baggie.

  4. Add 2 - 3 Tbs of olive oil to the baggie along with 1/2 tsp sea salt and 1/2 tsp black pepper.

  5. Cook in your air fryer at 425˚F for 15 minutes or in your oven at 425˚F for 25 minutes.

  6. Set aside while you prepare the chicken sausage (see below).

  7. Once chicken sausage is seasoned, cook in your skillet with the peppers and onions.

  8. Add in your sweet potatoes and mix together.

  9. Divide into 4 servings and top with an over easy eggs. Enjoy!

Directions For The Chicken Sausage:

  1. Add ground chicken to a medium bowl.

  2. Add your seasoning to your chicken and mix until well combined.

  3. Cook in the same skillet until cooked all the way through.
