Paleo Buckeyes
Servings: 24 Prep Time: 20 Min Cook Time: 0 Min Total Time: 30 Min
Ingredients:
1 cup of nut-butter of choice (cashew tastes best)
5 Tbs softened coconut oil
2 cups of paleo compliant powdered sugar
2 cups of Santa Barbara Melting Chocolate
2 Tbs coconut oil
Directions:
In a large bowl cream together nut butter and coconut oil.
Slowly add in powdered sugar (about 1/2 cup at a time). Mix until well combined.
Take 1 Tbs of the nut butter dough and roll into 24 balls. Transfer the balls onto a parchment paper lined baking sheet and freeze until firm (about 20 minutes)
Melt the chocolate and the 2 Tbs of coconut oil together in a microwave safe bowl. Heat in 30 second intervals until completely melted and smooth.
Remove balls from freezer. Using a toothpick or skewer dip most of the balls into the chocolate leaving a small bit exposed. Place back on the baking sheet to set.
Freeze for an additional 5-10 minuets before enjoying.
