Paleo Buckeyes

Ingredients:

  • 1 cup of nut-butter of choice (cashew tastes best)

  • 5 Tbs softened coconut oil

  • 2 cups of paleo compliant powdered sugar

  • 2 cups of Santa Barbara Melting Chocolate

  • 2 Tbs coconut oil

Directions:

  1. In a large bowl cream together nut butter and coconut oil.

  2. Slowly add in powdered sugar (about 1/2 cup at a time). Mix until well combined.

  3. Take 1 Tbs of the nut butter dough and roll into 24 balls. Transfer the balls onto a parchment paper lined baking sheet and freeze until firm (about 20 minutes)

  4. Melt the chocolate and the 2 Tbs of coconut oil together in a microwave safe bowl. Heat in 30 second intervals until completely melted and smooth.

  5. Remove balls from freezer. Using a toothpick or skewer dip most of the balls into the chocolate leaving a small bit exposed. Place back on the baking sheet to set.

  6. Freeze for an additional 5-10 minuets before enjoying.
