Easy Stuffed Pepper Soup

Servings: 6-8 Prep Time: 10 Min Cook Time: 4-6 Hrs Total Time: 6hrs 10min

Ingredients:

  • 1 lb of ground sirloin

  • 1 lb of ground hot or mild Italian sausage

  • 32 oz of beef stock

  • 14.5 oz can of diced tomatoes, onions & garlic

  • 15 oz can of tomato sauce

  • 1 medium onion chopped

  • 1 large bell pepper chopped

  • 1 small / medium bell pepper chopped

  • 1 cup of cooked brown rice

  • 1 bay leaf

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried basil

  • 1/2 tsp dried oregano

Directions:

  1. Brown meats in a large skillet. Once browned remove and set aside.

  2. In the same skillet, add in chopped veggies and sauté in olive oil until slightly tender. Season with salt and pepper and set aside.

  3. Add browned meats, sautéed peppers & onions, diced tomatoes, tomato sauce, beef stock, cooked brown rice and all the seasonings to a crockpot.

  4. Stir ingredients together until well mixed. Cook on high for 4 hours or on low for 6 hours.

  5. Serve hot & enjoy!
