Whole 30 Breakfast Casserole
Servings: 8 Slices Prep Time: 20 Minutes Cook Time: 30 Minutes Total Time: 50 Minutes
Ingredients for the Casserole:
4 Tbs of olive oil
1 large sweet potato (or 2 small sweet potatoes), chopped
1/2 medium onion chopped
5 sweet many peppers chopped (1/2 cup to 1 cup)
1-2 tsp garlic
1 lb of whole30 complaint breakfast sausage*
12 whole eggs scrambled or 6 scrambled eggs and 1 cup of liquid egg white or 32oz of liquid egg whites
2 cups of fresh spinach
1 tsp salt
1 tsp pepper
Ingredients for the Whole 30 Breakfast Sausage:
1lb of lean ground turkey or chicken
2 tsp poultry seasoning
1/2 tsp fine sea salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/8 tsp allspice
1/4 tsp fennel seeds
1/8 tsp cayenne pepper (optional)
1/8 tsp red pepper flakes (optional)
Directions for the Casserole:
Take chopped sweet potato and toss in 2 Tbs of olive oil. Sprinkle with 1/4 tsp salt and 1/4 tsp pepper and add to a greased 9x13 baking dish. Bake in a 375˚F oven for 20 minutes or until sweet potatoes are slightly softened.
While sweet potato is baking, take 2 Tbs of olive oil, garlic, chopped peppers and onions and add to a medium skillet over medium/high heat. Cook peppers and onions until the onions become clear (about 5 minutes).
Once peppers and onions are cooked, remove from the skillet and set aside. Brown breakfast sausage in the same skillet.
Once the sweet potatoes are done baking add cooked peppers and onions, sausage and spinach to the 9x13 dish. Take eggs, remaining salt and pepper and scramble together. Pour over the contents of the 9x13 baking dish. Bake at 375˚F in oven for 25-30 minutes or until eggs are fully baked.
Remove from the oven and allow to cool for 10 minutes. Slice into 8 equal pieces and serve hot.
Directions for the Breakfast Sausage:
Add all the seasonings to the sausage meat and mix until well combined.
Cooked as directed above.
