Single Serving Pancakes
Directions:
Mash 1/2 banana in a medium bowl.
Add in egg and egg white and whisk until combined.
Add in remaining ingredients and mix to form a batter. Batter will be thicker than normal pancake batter.
Scoop out the patter with 1/4 cup or cookie scoop and place into a warm skillet or griddle over medium/low heat. With a spoon flatten out the batter into a pancake shape.
Cook for 1-2 minutes on both sizes. Remove and top with desired toppings.

*Can swap banana for 1/2 of a medium sweet potato about 1/2 cup.
**1 egg white is 2 Tbs of liquid egg whites. If you are vegan swap out egg and egg white for 2 flax eggs.
