The World’s Fluffiest Paleo Pancakes

Ingredients:

  • 1 cup of finely ground almond flour (buy my favorite here)

  • 2/3 cup of tapioca flour (buy here)

  • 1/2 cup of coconut flour (buy here)

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 6 large eggs

  • 1/2 cup unsweetened dairy free milk of choice

  • 2 Tbs of Madhava Sweet agave syrup (buy here)

  • 1 tsp of paleo compliant vanilla extract

DIRECTIONS:

  1. In a large mixing bowl add all the dry ingredients. Whisk together to combine.

  2. Add in eggs, milk & agave. Whisk until a smooth batter forms.

  3. Heat a medium griddle to medium / high heat. Grease the griddle with coconut oil.

  4. Take a large cookie scoop or 1/4 cup and scoop out the batter. Pour the batter onto the preheated griddle.

  5. Cook each pancake for roughly 1-2 minutes per side or until bubble form (just like a regular pancake). This recipe makes 12-15 pancakes.
