The World’s Fluffiest Paleo Pancakes

Ingredients:
1 cup of finely ground almond flour (buy my favorite here)
2/3 cup of tapioca flour (buy here)
1/2 cup of coconut flour (buy here)
1 tsp baking soda
1/2 tsp baking powder
6 large eggs
1/2 cup unsweetened dairy free milk of choice
2 Tbs of Madhava Sweet agave syrup (buy here)
1 tsp of paleo compliant vanilla extract
DIRECTIONS:
In a large mixing bowl add all the dry ingredients. Whisk together to combine.
Add in eggs, milk & agave. Whisk until a smooth batter forms.
Heat a medium griddle to medium / high heat. Grease the griddle with coconut oil.
Take a large cookie scoop or 1/4 cup and scoop out the batter. Pour the batter onto the preheated griddle.
Cook each pancake for roughly 1-2 minutes per side or until bubble form (just like a regular pancake). This recipe makes 12-15 pancakes.
