Honey Lime Shrimp
Servings: 2-4 Prep Time: 30 min. Cook Time: 12 min Total Time: 42 min
Ingredients for the shrimp:
1 lb of small or medium peeled, deveined & de-tailed shrimp
1 lime, juiced
3 Tbs of olive oil
1 Tbs of honey (remove for whole30)
2 cloves of garlic, minced
3 Tbs of fresh cilantro chopped
2 tsp of chili powder
1/2 tsp of cumin
1/2 tsp smoked paprika
1/2 tsp sea salt
1/4 tsp black pepper
1/4 tsp red chili flakes (more for a spicier option)
Ingredients for the Guacamole:
2 ripe avocados
2 plum tomatoes
1/4 of a medium onion finely chopped
1/4 of fresh cilantro chopped
1 small jalapeño seeds removed & finely chopped
juice of one lime
salt to taste
Directions for the Shrimp:
In a medium bowl add in all ingredients (not including the shrimp) and whisk to combine.
Once all marinade ingredients are well combined pour over shrimp (be sure to rinse the shrimp off and pat dry before marinating them). Stir the marinade to coat the shrimp completely. Allow shrimp to marinate for a minimum of 30 minutes.
Once shrimp has marinated, heat up a large skillet over medium heat. Add 1 Tbs of oil to the pan. Once the pan is hot add shrimp to the skillet. Make sure you lay each shrimp in the skillet individually so that they are cooked evenly.
Cook shrimp on each side for 2-3 minutes or until slightly pink in color. Once shrimp have cooked remove from the skillet.
Directions for the Guacamole:
Take avocados and remove the pits.
Scoop out the avocado filling and place into a medium bowl. With a fork or a potato masher, mash avocado until smooth.
Add In remaining ingredients and stir to combine.
