Strawberry Pop Tarts
SERVES: 12 PREP TIME: 20 MIN COOK TIME: 12 MIN TOTAL TIME: 32
INGREDIENTS FOR THE DOUGH:⠀
2 cups of King Arthur all purpose gluten free flour ⠀
1 cup of old fashioned oats blended⠀
1/2 tsp sea salt⠀
3 Tbs of coconut oil frozen till solid⠀
6 Tbs ghee frozen until solid*
2 Tbs pure maple syrup or honey ⠀
1 tsp vanilla extract⠀
1 egg white**⠀
1/4 cup of ice water (and possible a few Tbs more). ⠀
INGREDIENTS FOR THE FILLING:⠀
6 Tbs of homemade strawberry jam (see my blueberry chia jam recipe here … just swap the blubes for strawberries and you can leave the chia seeds out if you aren’t a fan)
INGREDIENTS FOR THE FROSTING:⠀
1/2 cup organic powdered sugar ⠀
1 tsp vanilla ⠀
2-4 Tbs of water or diary free milk
Notes:
*For vegan swap out the ghee for more coconut oil.
**For vegan swap out the egg whites with a flax egg
