Chunky Monkey Breakfast Cookies
Servings: 12 Prep Time: 5 Min Cook Time: 10 Min Total Time: 15 Min
Ingredients:
2 bananas
1 cup of almond flour
1 cup of Banana Nut Nutsóla Mix
1/4 cup ground flax seeds
1 Tbs chia seeds
1/4 tsp sea salt
2 Tbs melted coconut oil
2 Tbs pure maple syrup
Optional Toppings: 1/2 cup enjoy life chocolate chips melted
Directions:
Add bananas into a large bowl and mash until smooth. Whisk in coconut oil and pure maple syrup and stir until well combined.
Add remaining ingredients and mix until a cookie dough forms.
Scoop out 2 Tbs worth of dough and roll into balls. Place cookie dough balls on a parchment paper lined baking sheet. Press the dough down with the palm of your hand to form 1/4 inch thick cookies.
Bake at 350˚F for 10 minutes. Once the cookies finish baking, remove from the oven and allow the cookies to completely cool before drizzling with melted chocolate.
