Chunky Monkey Breakfast Cookies

Ingredients:

  • 2 bananas

  • 1 cup of almond flour

  • 1 cup of Banana Nut Nutsóla Mix

  • 1/4 cup ground flax seeds

  • 1 Tbs chia seeds

  • 1/4 tsp sea salt

  • 2 Tbs melted coconut oil

  • 2 Tbs pure maple syrup

  • Optional Toppings: 1/2 cup enjoy life chocolate chips melted

Directions:

  1. Add bananas into a large bowl and mash until smooth. Whisk in coconut oil and pure maple syrup and stir until well combined.

  2. Add remaining ingredients and mix until a cookie dough forms.

  3. Scoop out 2 Tbs worth of dough and roll into balls. Place cookie dough balls on a parchment paper lined baking sheet. Press the dough down with the palm of your hand to form 1/4 inch thick cookies.

  4. Bake at 350˚F for 10 minutes. Once the cookies finish baking, remove from the oven and allow the cookies to completely cool before drizzling with melted chocolate.
