Nut Butter Pancakes
Ingredients:
1 cup of Arrowhead Mills Organic Spelt Flour (buy here)*
1 Tbs of Madhava Coconut Sugar (buy here)
1/4 tsp sea salt
2 tsp of baking powder
2 large eggs room temp
1 Tbs of coconut oil (melted then measured)
1 cup of So Delicious unsweetened vanilla coconut milk
3/4 cup of creamy almond butter (find my easy 1 ingredient recipe here)**
Directions:
Mix all dry ingredients in a large bowl. Add in wet ingredients and mix until a batter forms. Scoop out 1/4 cup serving on a hot griddle. Cook on one side for 1 min and 30 sec and flip. Cook an additional 30 seconds on flipped side. Top with your favorite toppings and enjoy! Makes 12 pancakes (4 pancakes = 1 serving)
Macros:
*Can swap spelt four for oat flour for a gluten free option (use only 2/3 cup of oat flour)
**Works with any nut butter
