Double Chocolate Chip Espresso Cookies

Ingredients:

1 cup of Quaker old fashioned oats dry (blended up to make oat flour)

1/2 cup of Bob's Red Mill almond flour*

1/2 cup of Madhava coconut sugar

2 Tbs of espresso powder 

1/4 cup of unsweetened cocoa powder

1/2 tsp baking soda

2/3 cup of smooth creamy almond butter (grab my 1 ingredient recipe here)

1/4 cup of Perfect Supplements coconut oil softened

1 large egg

1/3 cup of So Delicious unsweetened coconut milk

1/3 cup of Enjoy Life mini chocolate chips

1/3 cup of Enjoy Life dark chocolate chips

Directions:

In a large bowl add all liquid ingredients and cream together. Add coconut sugar and mix well. Once well mixed slowly sift the dry ingredients into the wet. Mix until dough is formed. Fold in chocolate chips. Scoop out dough and place on a parchment paper lined cookie sheet. Bake at 350 degrees F for 8-10 minutes. Should make roughly 20 cookies.

Noted:

*To swap out the almond flour, replace with equal parts spelt/ white whole wheat flour or you can replace with 1/4 cup oat flour.
