Chocolate Chip Zucchini Bread Pancakes
Ingredients:
1 1/2 cup of King Arthur organic 100% whole wheat flour
2 Tbs of Madhava coconut sugar
3/4 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp sea salt
2 eggs
1 tsp vanilla extract
1 cup unsweetened coconut milk + 1 Tbs Apple Cider Vinegar (makes dairy free buttermilk)*
2 Tbs coconut oil meted
3/4 Enjoy Life dark chocolate chips
1 1/2 finely shredded zucchini (about 2 medium zucchini)
Directions:
Mix all wet ingredients into a large mixing bowl. Add all dry ingredients (reserving zucchini and chocolate chips for the end. Fold in zucchini and chocolate chips. Pour 1/4 cup of batter on a hot griddle. Flip after 1 1/2 minutes and allow to cook for 30 more seconds. Serve warm with your favorite toppings!
