Red, White, & Blueberry Individual Cobblers

Ingredients for the filling:

1 cup blueberries
1 cup sliced strawberries
1 cup blackberries
1/4 cup 100% natural orange juice
1 Tbs tapioca flour
1/2 tsp cinnamon

Ingredients for the topping:

1/2 cup coconut flour
1/3 cup oat flour
1/4 cup old fashioned oats dry
1/4 cup coconut oil melted
2/3 cup pure maple syrup

Directions:

Combine all filling ingredients into a large bowl. Divide filling into 6 greased ramekins. Mix all dry topping ingredients in a bowl. Add liquid ingredients and mix until a dough is formed. Scoop six dollops of the topping onto the ramekins. Place cobblers on a cookie sheet in case of spilling. Bake at 350 for 25-30 minutes or until top of crust turns golden brown. Serve hot with your favorite ice cream or dairy free alternative. Makes 6 single serving cobblers:
