Double Chocolate Molten Mug Cake

Ingredients: ⠀

1/2 banana mashed ⠀

1 egg⠀

1 tsp vanilla extract ⠀

1 Tbs coconut oil ⠀

1 Tbs maple syrup or honey ⠀

1 tsp coconut flour ⠀

1/2 tsp baking soda ⠀

2 tsp unsweetened cocoa powder ⠀

1 Tbs favorite creamy nut butter (mine is almond butter) ⠀

1-3 Tbs of @enjoylifefoods mega chocolate chunks ⠀

 

Directions: ⠀

Mix all wet ingredients into a microwave safe mug. Mix all dry ingredients into a small separate bowl. Add to the wet ingredients and stir in chocolate chunks. Plop nut butter into the middle of the batter. Microwave for 1-2 1/2 minutes or until outside of cake has formed. Middle should still be slightly gooey cause of the nut butter. Remove from microwave and let cool for 1-2 minutes. Grab a spoon, kick your feet up and sink into the chocolatey goodness.
