Banana Bread Mug Cake



1/2 banana mashed
1 egg
3 Tbs of dairy free milk
1/4 tsp vanilla extract
2 Tbs coconut flour
1/4 tsp baking powder
1/4 tsp cinnamon
pinch of salt
handful of blueberries*


Combine mashed banana, egg, vanilla extract, and almond milk into a microwave safe mug or bowl. Add in the rest of the ingredients and stir until a batter is formed. Fold blueberries into batter. Microwave on high for 1-2 minutes or until cake is cooked all the way through. Let cool for 5 minutes. Top with almond butter or your favorite nut butter. Grab a spoon and a warm cup of coffee and enjoy!

*you can substitute the blueberries for any others type of fresh or dried fruits.
